Comfort Food: Kiwi Mussels, Shrimp and Tomato Soup Recipe


If you follow me on instagram, you probably already know this seafood recipe. It's one of my favorite comfort food to make for the winter season and I wanted to share this with you. I hope you'll like it. 

Kiwi Mussels, Shrimp and Tomato Soup Recipe 

-2 ripe tomatoes 
-2 tbsp olive oil 
-1 garlic clove, finely chopped 
-1 cup yellow onion, finely chopped 
-1 shallot, finely chopped 
-3-4 tbsp Rice wine vinegar (I used Murakan #Japanese brand) 
-24 oz Cleaned Mussels ( I used Frozen New Zealand Greenshell Mussels. Make sure to thaw mussels in the refrigerator a day ahead) 
-1 cup of shrimp with shell. 
- A handful Spinach Leaves 
-1 Bay Leaf
-1 small ginger 
-Garlic salt (I love garlic salt but you can do salt if you prefer) 
-Black pepper 

1. Heat the oil in a large pan with a tight-fitting lid. Add garlic and yellow onions and gently stir for about 2-3 mins. until softened. Pour in wine and add tomatoes and seasoning. Add bay leave and ginger. Stir well and simmer for 2 mins. 

2. Add mussels and shrimp and 1/4 cup of water. Cover and simmer for about 5 mins. Add garlic salt and black pepper to taste. Add shallots. Cover and simmer until heated through. 

3. Add spinach at the end until wilted.

Just remember that mussels are naturally salty so take care in seasoning and add more wine vinegar or water until your heart's content. Happy Holidays!
